Proof is in the pudding for Brazilian Flavours’ new dish

"A YORKSHIRE food firm has launched a new gluten, wheat and dairy-free version of a local dish, as well as giving it a South American twist."

Brazilian born Isabel Gordon, owner of Bradford based Brazilian Flavours, has created a new home-bake Yorkshire Pudding mix.

When Mrs Gordon, who has lived in the UK for 20 years, first set up the company her goal was to share traditional Brazilian ingredients with the UK market.

She said: “My aim was to highlight the wonderful beneficial properties of some of Brazil’s finest root flours and to demonstrate their intriguing functionalities in some of Yorkshire’s most popular foods.”

Based on the traditional Brazilian snack, pao de queijo, Mrs Gordon’s first product was a bread mix.

Mrs Gordon said it was originally developed with taste, flavour and texture in mind, and the fact that it is gluten, wheat and allergen free is coincidental.

She said: “After the launch of the dough ball mix and the overwhelming interest received from retailers like Waitrose, I realised that I had a great opportunity to break into the gluten free market and that there was a huge demand for great tasting ‘free from’ products. Seeing my products and recently developed Isabel’s Naturally Free From brand more widely available on the shelves of leading retail stores, including Asda, has been extremely humbling.”

The natural properties of native South American flours have lent themselves well to develop great tasting gluten free and wheat products, according to Mrs Gordon.

Mrs Gordon moved from Brazil to London in 1990 and six years later she and her Yorkshireman husband, Ian, moved to Tong, in Bradford, and began to develop her Latin American recipes commercially.

Mrs Gordon, who took a chef’s training course at the Thomas Danby College in Leeds, has seen her product range evolve to include a pizza base mix, batter mix, Yorkshire Pudding mix and dough ball mix.

The Yorkshire Post previously reported on Brazilian Flavours when it launched its gluten and wheat-free pizza base mix, in partnership with pizzeria Salvo’s, of Headingley, in Leeds.
