Green & Black's Taste Assistant wins by a nose
by fdiforum.net - 09/05/2011
"William Leigh has won the much-coveted role of Taste Assistant at premium chocolate brand Green & Black’s."
It was billed as the best job bar none, and the chance to taste chocolate every day and travel the world sourcing the finest ingredients, generated an overwhelming response, with over three thousand people applying for the enviable role within eight weeks.
William beat thousands of hopefuls to land the chocoholic’s dream job, following a rigorous process where he had to prove his sensitive palate, flair for flavour, passion for all things chocolate and of course, a superior sense of taste and smell. He says, “I was working as a food writer when I read about the role and I just knew it was an incredible opportunity. Chocolate is one of my two favourite foods, alongside steak. I have always loved creating recipes and experimenting with food combinations so it seemed natural for me to apply for the job!”
“As far as I know there were around 3,000 applicants in total which were whittled down to twenty of us who then got through to the first round where we had to undergo a taste test. Micah Carr-Hill, my new boss, had flavoured a few ganaches with different herbs and spices which we had to identify. Those who managed to successfully guess the ingredients, which was no mean feat as flavours included thyme, lemongrass and caraway, made it into the grand finale. The final stage of the process was a cook off challenge, and I had to create a single dish that I thought represented Green & Black’s Fairtrade and Organic ethics... and I only had an hour in which to do it!"
William now works closely with Micah Carr-Hill to develop new recipes and flavour combinations and searching out the best quality ingredients from all over the globe with which to create new Green & Black’s varieties. He is already working on a new flavour Green & Black’s bar – the company’s sixteenth variety – which is scheduled to appear on shop shelves in September.
